Soothing Chicken Soup

Gut healing and immune boosting soup and oh so warming for the Winter! Herbalicious takes this up a notch in flavour along with all the antibacterial benefits of the herbs to go with it. The gelatin from the bones heal the gut and give you a boost of essential vitamins as well. A healthy gut means a healthy body and a strong immune system - period.

Make a big batch and freeze it in smaller portions for when you need it. Check out my little blog post on the benefits of bone broth here and there's a broth recipe link in there too.

Soothing Chicken Soup

The bones and greens are the key ingredients here. Soothing to the gut for a boost in immunity that we all need as our Vitamin D levels go down during Winter. Deep, but true!

Ingredients

  • 2 large carrots diced
  • 2 sticks of celery, diced
  • 2 brown onions, diced
  • Half a bunch of leafy greens like silverbeet, shredded
  • 1 whole chook or 6-8 drumsticks or bone-in thighs
  • 2 tablespoons of Secret Spice Herbalicious or other fresh or dried herbs
  • 2 teaspoons of unrefined salt
  • 1 litre of filtered water

Instructions

  1. Heat a tablespoon of ghee or lard in a heavy based, large pot on a moderate heat
  2. Brown the chicken pieces, if you have time, for a bolder flavour.
  3. Toss the veggies in the pot as you chop them starting with the onions and carrots as they take longer to cook. Push the chicken to the side so you can stir the veggies as you add them.
  4. If you have a whole chook (cheapest way) then you’ll need to chop it up or use a deeper stock pot and leave it whole.
  5. Add all the ingredients to the pot adding enough water to just cover the chicken
  6. Simmer for 45 minutes or until chicken is cooked through
  7. Remove the chicken and pull the meat off the bones.
  8. Shred the chicken and put it back in the pot.
  9. Taste for salt and add more herbalicious-ness if you need.
